Home made Indian cheese (paneer)

INGREDIENTS

1 litre or 32 fl oz Milk (may substitute it with soy milk)

2 tablespoons of Lemon juice or Vinegar

METHOD

1. Boil milk in an open hollow vessel. when it starts to boil put it on simmer.

2. Add lemon juice/vinegar and keep stirring for 5 minutes.

3. Repeat step 2. Milk would start to get transparent and you would notice a thick layer of cheese on the surface.

4. When it starts to curdle, drain on muslin cloth or sieve.

5. You may use crumbled cheese to make any dish thick and creamy.

If you want to use panner in form of cubes, put some weight on drained cheese wrapped in a cloth. Refrigerate it for some time so it gets flat and solid. Cut it into cubes and enjoy it in a gravy.
